Cheese Scones / American Style Biscuits

 

Makes 5-6 scones

SHOPPING LIST

 

DRY MIX:

1 cup soy flour and ¼ cup coconut flour

Alternatively,1 cup almond flour and ½ cup soy flour OR ¼ cup coconut flour  - whichever mix you have available

 

½ tsp salt (free flowing not rocks)

½ tsp xanthan gum

1 tsp onion powder

2 tsp garlic powder

 

WET MIX:

3 tbsp chia seeds in a bowl with 9 tbs water. Let sit for five minutes. 

Alternatively, 1 tsp whole psyllium husk, or 1/2 tsp ground psyllium husk, with 3 tbsp water (this is stickier so might work better to avoid crumbling)

50g / ¼ cup olive oil

2 tsp baking powder

½ cup of vegan cheese - soft cheese or shredded, both work fine


 

INSTRUCTIONS:

Mix all dry ingredients together in a bowl.

Mix all wet ingredients together in a different bowl.

Tip the dry mix into the wet mix.

Mix well, shape into palm sized balls and flatten a little.

Pop into the air fryer (oil free) at 150c for 15 minutes (not sure on time - check cooked before removing) or oven 150c for 23 mins.
