Scrambled Tofu

Serves 3-4

Approx 1g net carbs per person

SHOPPING LIST:

 

One medium onion (approx 150g), chopped

Two cloves of garlic, minced

One chilli or chilli flakes/powder

Two tomatoes, chopped

Block of firm tofu, crumbled

A glug of soy milk

Teaspoon of turmeric

I tablespoon of nutritional yeast

Extra virgin olive oil for cooking

Avocado if desired

 

INSTRUCTIONS:

 

  1. Fry the onion, garlic and chilli for a couple of minutes, add tomatoes and turmeric and cook for a few more minutes. 

  2. Crumble up the tofu with your hands and add to the pan with the milk. 

  3. Add as much or as little milk as you want depending on the consistency you want to get that creamy, scrambled egg type texture. 

  4. Finish with a sliced avocado.
